Blood Orange
Lot 042 · 12.4° Brix · Sicilian varietal

Orchard runs premium perishables from the tree to the shelf. It forecasts the pick, scans every fruit, blends by ratio and routes by freshness. The first chain it runs is craft juice.
Sugar and acidity are sampled daily on the trees. Orchard forecasts the peak days ahead and issues the pick window to the crew. Then the clock runs.
The data layer decides. The physical flow moves the fruit. Every decision is printed on the lot it belongs to.
Fed by satellite and soil data, daily Brix and acidity samples, line scanners, a sensor on every pallet, and sell-through from every shop.
Models propose. People pick, press and drive. The numbers go on the bottle.
Brix at pick. Acidity 0.61%. Sampled daily, called by forecast.
Of fruit scanned. Near-infrared for sugar, camera for bruising. 3.1% never reached the press.
Sweet block to sharp block, solved for one house profile. Added sugar: none.
Logged every five minutes, pallet by pallet. Zero excursions on lot 042.
Recalculated from the real temperature history. Not stamped once at bottling.
A pallet with the life for it travels far. One that sat on a warm dock goes to a nearer shelf.
Figures on this page are sample data from a prototype lot.
Brix climbs and acidity falls as fruit ripens. Orchard forecasts both ten days out and calls the pick when the ratio peaks, so the crew works a 48-hour window instead of a calendar date.
Two lots from two blocks, measured and solved to one profile. Drag the ratio and watch the profile move. The October bottle tastes like the August one.
On the house profile.
A sensor rides on every pallet. Orchard weighs each five-minute sample with a Q10 of three: ten degrees warmer, the juice ages three times faster. Remaining life is recalculated from what the pallet actually saw, and the route follows.
Two days of transit at 2.8°C. The pallet keeps enough life for the far route.

Three fruits, one lot each, 1,200 bottles a lot. Cold pressed, HPP, kept chilled. Taste what the chain does.
